Sultans of Spice #01 - Black Pepper Prawns

Food is an indispensible aspect of our culture. We are extremely excited to partner with the Sultans of Spice and we will present to you authentic recipes on a weekly basis. 

The recipe serves 2 and the cooking time will be between 30 to 45 minutes. Since the core of this dish involves prawns, we have prepared another video to illustrate on how to prepare prawns.

How to Prepare Prawns
 
 

Ingredients

300g prawns (cleaned and prepped) 
1 large onion
10 curry leaves
1 tablespoon butter
2 tablespoons black peppercorns
2 tablespoons oyster sauce
2 tablespoons sweet soy sauce
1 tablespoon garlic and ginger paste
5 chilli padis

1-2 tablespoon(s) chilli powder
1/4 teaspoon turmeric powder

Directions
 


1. In a large bowl filled with water, add the cleaned prawns, turmeric powder and mix well.
2. Remove prawns from the water and keep aside.
3. Grind peppercorns coarsely using a pestle and mortar and keep aside.
4. Heat 4 tablespoons of oil in a wok and add the butter.
5. Optional: add a teaspoon of mustard seeds.
6. Once mustard seeds pop, add onions and curry leaves. Sauté for 3 minutes.
7. Add garlic and ginger paste and sauté for further 1 minute.
8. Add chilli padis, chilli powder and cook till raw chilli smell subsides. Roughly 2-3 minutes.
9. Season with salt.
10. Pour in oyster sauce and sweet soy sauce and mix well.
11. Add coarsely ground black pepper.
12. Deglaze wok with a little bit of water if it's too dry.
13. Add prawns and coat it well with the mixture.
14. Cover wok with a lid for 1 minute.
15. Remove lid. Once prawns are pink in colour, black pepper prawns are ready to serve!
